Stuffed Potato (Papa Rellena)

  • 3 oz lean ground beef or turkey ground beef
  • 1/4 chopped onion
  • 1 garlic clove
  • A pinch of salt and pepper
  • Cooking spray
  • 1/2 cubed tomato
  • 1 tbsp parsley
  • 1 tbsp Chopped chives
  • 1 medium potato


  1. Slice potato in half and bake at 450 F for 40 min or until cooked. It should be soft.
  2. Spray a layer of cooking spray in a pan and cook the beef with the garlic, onion, chives, tomato and a pinch of salt and pepper.
  3. When the potato is ready with a spoon take out the stuffing but be careful it should have enough potato in the skin, so it doesn't lose its shape.
  4. Stuff the potato with the beef and sprinkle some parsley on top.
