Ground Beef Lasagna

  • 3 sheets of lasagna
  • 1/2 pound ground beef
  • 1 onion
  • 1 zucchini
  • 1 eggplant
  • 1 green pepper
  • 1 red pepper
  • 1 cup crushed fresh tomatoes
  • 1/2 cup Low-fat mozzarella cheese
  • Salt and pepper to taste
  • Olive oil


  1. Preheat the oven to 300 F.
  2. Cook the lasagna and let cool for a few minutes. (Try to extend it so that it doesn't break).
  3. Wash and chop the onion, zucchini, eggplant, and peppers into squares.
  4. In a pan, pour a little olive oil and cook the vegetables.
  5. Gradually add the meat and stir until thoroughly mixed with the vegetables. Season with salt and pepper to taste.
  6. In a baking dish, place a lasagna at the bottom and pour the meat with vegetables. Cover the ingredients with a little tomato sauce.
  7. Place the second lasagna and repeat the procedure.
  8. Finish by placing the last lasagna and pour mozzarella cheese.
  9. Bake for 20-30 minutes or until all ingredients are fully cooked and the cheese is melted.
  10. Remove from oven, let stand for at least 10 minutes, and delight your family with this yummy ground beef lasagna recipe.
