Egg Fajitas

  • 2 large whole wheat tortillas (You can also use corn tortillas)
  • 2 tbs Olive Oil
  • 4 eggs whites
  • 3 oz. Low-sodium turkey ham
  • 2 tablespoons chopped cilantro
  • 1/2 avocado (sliced)
  • Salt and pepper to taste


  1. Preheat the oven to (350 F), and begin to heat the tortillas. Be careful that they don't crisp up.
  2. In a bowl, mix the egg whites, salt, and pepper, plus a tablespoon of cilantro.
  3. Add olive oil in a frying pan over medium heat. Cook the turkey ham until golden.
  4. Add the eggs, cook and stir it until you have a firm consistency.
  5. Finally, prepare the egg fajitas by placing the scrambled egg in the center of the tortilla, place the sliced avocado and cilantro on top. Wrap it perfectly and enjoy!
