Egg Entomatadas

  • 2 corn tortillas
  • 1/2 cup of natural tomato puree
  • 2 scrambled egg whites with your favorite veggies
  • Water
  • Parsley
  • Jalapeños (optional)
  • Cooking Spray


  1. Heat the tortillas on a skillet with the cooking spray.
  2. In another skillet mix the tomato puree with enough water to reduce into a sauce.
  3. Once the sauce comes to a boils, take it off the heat and soak the tortillas in it.
  4. Fill the soaked tortillas with the scrambled egg whites.
  5. Serve and garnish with the parsley and jalapeños and enjoy your amazing entomatadas.
