Plantain Soup

  • 1 small avocado
  • 1/2 green plantain (boiled)
  • 2 cups of low-fat and low-sodium chicken broth
  • 2 boiled and shredded chicken breasts
  • Salt and pepper to taste
  • Hot Sauce
  • Side Salad (Optional):
  • Lettuce
  • Tomato
  • Cucumber


  1. Peel the avocado, remove the pit and blend until pureed.
  2. Do the same thing with the plantain.
  3. Mix the plantain with the avocado and the broth.
  4. Season it with salt and pepper and add the chicken.
  5. Cook for 20 minutes at low heat, and you're done! You can garnish with fresh avocado and add hot sauce for a little flavor kick.

  7. Serve with a side salad and you have a complete lunch following the Traffic Light diet.
