Mediterranean Sandwich

  • 2 tbsp of hummus
  • 1/4 cucumber cut in thick slices
  • 1/4 cup red bell pepper
  • 2 slices whole wheat or multigrain bread
  • 3 oz thin sliced sirloin steak
  • 1/2 tsp black pepper
  • 1/2 tsp low sodium salt
  • Cooking spray


  1. Heat a skillet with a light coat of cooking spray on medium high heat.
  2. Add salt and pepper to taste to the steak and cook for 10 to 15 minutes for medium well doneness.
  3. Toast bread if desired.
  4. Spread hummus over bread.
  5. Add cumber and red bell pepper as desired, eat the rest as side salad.
