Turkey Cannelloni

Ingredients

  • 250 g boiled and pulled turkey
  • Whole wheat pasta sheets
  • 3 tomatoes
  • 1/2 onion
  • 2 garlic cloves
  • Parsley
  • Chives
  • 1/2 red pepper
  • 1/2 green pepper
  • Salt and pepper to taste

Preparation

  1. Heat water in a pot and add the pasta sheets, when they're done take them out and let them settle.
  2. Sauce: dice the garlic cloves and the onions in cubes, fry them with 1/2 a tablespoon of extra virgin olive oil until the onion is crystallized.
  3. Cut the tomatoes and add them with salt and pepper to taste for 5 minutes.
  4. Take everything to the food processor or blender and save.
  5. Sauté the turkey with the peppers, chives and salt and pepper.
  6. Place the pasta on a baking tray and start rolling the cannelloni with the turkey and the sauce.
  7. Bake at 350F for 20 minutes or until done.
