Tuna Stuffed Tomatoes

  • 1 can of Tuna, drained and flaked
  • 1/2 tbsp diced onion
  • 1/2 tbsp diced green bell pepper
  • 1/4 tsp chopped fresh basil
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp ground black pepper
  • 1/4 tsp low-sodium salt
  • 2 large tomatoes
  • 2 Lettuce leafs
  • Mustard


  1. Preheat oven to 400 F.
  2. Cut a thin slice from the top of each tomato and scoop out most of the pulp, be careful not to scoop too much, so the tomato will still hold its shape.
  3. Invert on paper towel and set aside.
  4. In a small bowl, combine tuna, onion, bell pepper, basil, olive oil, pepper, and salt.
  5. Stuff each tomato with tuna salad mixture.
  6. Place in lightly greased pan and bake for 15 - 20 minutes.
  7. Add the mustard on top and serve over the lettuce.
  8. Garnish with Basil as desired.
