Spaghetti Squash with Beef

  • 1 pound of ground meat
  • 1 medium squash
  • 1 tbsp Olive oil
  • 1 medium Tomato
  • 1 large Onion
  • Salt and pepper to taste
  • 1/4 cup chopped Cilantro


  1. Preheat the oven to 400 F.
  2. Slice the squash in half and use a soup spoon to scrape out the seeds.
  3. Brush the squash with olive oil, salt, and pepper on the inside.
  4. Place the squash in a roasting pan and transfer to the oven and cook for 30 to 45 minutes.
  5. Remove from oven and let cool.
  6. Use a fork to gently pull the squash flesh from the peel and to separate the flesh into strands. The strands wrap around the squash horizontally, so rake your fork in the same direction as the strands to make longer "noodles".
  7. Meanwhile, the squash cools, cook the ground meat in a frying pan.
  8. Add olive oil, onion, salt and pepper to taste.
  9. Pour the meat inside the squash and garnish with diced tomatoes, cilantro, and strips of pumpkin that you can scrape with a fork.
  10. Serve this delicious spaghetti squash and enjoy it!
