Colombian Ajiaco

  • 2 chicken breasts with no skin
  • 4 cups water
  • 3 scallions
  • 2 garlic cloves, minced
  • 1 white potato, peeled
  • 10 papas criollas
  • 1 tbsp Colombian guascas
  • Sour cream (non fat)
  • Salt and pepper to taste
  • Lemon (optional)


  1. Put the chicken, scallions, garlic, salt, and pepper to cook in water and let it boil until the chicken is fully cooked.
  2. Remove the chicken from the pot, shred and reserve.
  3. Add the potato and papas criollas to the broth, cover, and simmer until potatoes get soft.
  4. Remove the scallions from the broth and mash the potatoes in the broth.
  5. Let it boil for a couple of minutes to reduce.
  6. Add the shredded chicken and guascas, cover and let it reduce on medium heat until desired consistency.
  7. Serve on a large plate and garnish with sour cream. You can squeeze a bit of lemon.
