Chicken Taco Salad

  • 1/2 lb chicken breast
  • 1 pinch of salt
  • Pepper to taste
  • Cooking spray
  • 1 1/2 diced tomato
  • 1/4 cup of diced onion
  • 1/4 cup cilantro
  • 1/2 diced jalapeño
  • 1 tbsp lemon juice
  • 1/2 cup of lettuce
  • 1 whole wheat tortilla
  • 1 tbsp. avocado


  1. Spray some cooking spray in a pan.
  2. Heat a layer of cooking spray skillet to medium-high heat and cook seasoned chicken with salt and pepper for 10 minutes or until fully cooked.
  3. Mix the tomato, onion, cilantro, jalapeño, lettuce and lemon juice in a bowl.
  4. Preheat the oven to 350 F.
  5. Bake the tortilla in a bowl for about 10 mins.
  6. When the tortilla is baked set it aside.
  7. Mix the chicken with the rest of the ingredients and put them inside of the tortilla bowl.
  8. Top it with a tablespoon of avocado.
