Chicken With Rajas Of Chile Poblano

  • 1 tsp olive oil
  • 1/2 onion chopped in cubes
  • 2 rajas of chile poblano without seeds
  • 1 tomato cut in cubes
  • 1 garlic clove, minced
  • 2 chicken breasts, boiled and shredded
  • Green sauce made with 6 tomatillos and 2 garlic cloves boiled in water
  • 1 cup of cilantro, chopped
  • 2 pinches of salt
  • 10 leaves of oregano, chopped


  1. On a sauté pan, add the olive oil, onion, rajas of chile poblano, tomato, garlic, chicken, green sauce and cilantro and cooked for a couple of minutes until it starts boiling.
  2. Add salt and oregano to the mixture and cook it for 10 more minutes approximately or until desired consistency.
  3. Serve with corn tortillas and enjoy!
