Stuffed Bell Peppers with Beef and Mushroom

  • 2 Small Red Bell Peppers, Halved and Seeded
  • 1/2 lb Lean Ground Beef
  • 1 pump Non-stick Cooking Spray (original or olive oil flavor)
  • 1 cup Fresh Mushrooms, Sliced
  • 3 oz White Onion, Diced
  • 1 cup Salsa Sauce
  • Low Sodium Salt and Pepper


  1. Beef:
  2. Preheat oven to 375 F.
  3. Season meat with salt and pepper to taste and set aside.
  4. Spray large skillet with 1 pump of non-stick cooking spray.
  5. Put beef in the skillet and brown over medium-high heat. Halfway through browning, add mushrooms and onion. Continue cooking until meat is fully browned.
  6. Drain fat from skillet.
  7. Add 1/2 cup of Salsa to bond mixture, making sure meat does not become too runny or "watery".
  8. Peppers:
  9. Fill medium saucepan of water and heat until boiling.
  10. Place peppers in water, and boil for 2 to 3 minutes, until just tender; remove from water.
  11. Place peppers, hollow side up, in a baking dish, and fill each with beef mixture.
  12. 1 Bake in preheated oven for 15 to 20 minutes, until bubbling.
  13. 1 Serve over a little bit of sauce and enjoy!
