Ranchero Shrimp

  • 1/2 lb medium shrimp, peeled
  • 1 teaspoon cumin
  • 1 tablespoons extra virgin olive oil
  • 1 teaspoon oregano
  • 2 scallions, finely chopped
  • 1 garlic clove, minced
  • 1 large tomato, diced
  • 2 jalapeño chilies, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges or salt and pepper to taste


  1. Add the scallions and garlic to a skillet with the olive oil and cook for 1 minute, stirring often.
  2. Add the tomato, chili and cilantro, stirring well to incorporate. Cook for 3 minutes.
  3. Add cumin and oregano and cook for 2 minutes longer.
  4. Add the shrimp and cook for approximately 1 1/2 minutes on each side or until pink.
  5. Serve immediately with lime wedges, salt, and pepper.
