Stuffed Tenderloin

  • 3 oz Beef Tenderloin
  • 1/4 cup spinach
  • 1/4 cup mushrooms
  • 1 pinch of oregano
  • 1 pinch of salt
  • 1 pinch of cumin
  • 1 Tbsp Chopped onion
  • 2 crushed garlic cloves
  • 1 Tbsp red pepper
  • Cooking spray
  • 3 Tbsp. low-sodium chicken/beef broth


  1. Preheat the oven to 350 F. Add some cooking spray to a skillet, and add the onion, garlic, and mushrooms.
  2. Cook them until tender.
  3. Mix all the cooked veggies with the spinach and red pepper.
  4. Season the tenderloin with a little bit of salt, cumin, pepper and oregano.
  5. Add the rest of the veggies and roll them up.
  6. Put the stuffed tenderloin in an oven tray and cook for 20-30 minutes until the beef has the desired cooking temperature.
  7. Once the beef is cooked, put it in a pan, add the chicken/beef broth and let it marinate for 5 minutes with the lid on.
  8. Slice the beef up in 2-inch pieces and enjoy!
