Black Bean Soup

  • 1 teaspoon olive oil
  • 1 onion, chopped (1/2 cup)
  • 1 clove garlic, finely chopped
  • 3 oz. chicken breast chopped
  • 1/2 cup chicken broth, low sodium
  • 1 cup of beans
  • 1 chopped Chile
  • 1 teaspoon dried oregano leaves
  • 1 pinch ground cumin
  • 1/8 teaspoon red pepper
  • Chopped fresh cilantro to taste
  • Pico de Gallo:
  • Tomato
  • Onion
  • Cilantro
  • Lemon and salt to taste


  1. In a saucepan heat oil over medium-high heat. Add onion, garlic and chicken.
  2. Cook and stir until the chicken is no longer pink.
  3. Add remaining ingredients except for cilantro. Heat until boiling. Reduce heat, cover, and simmer for 10-15 minutes, until flavors are added, stirring occasionally.
  4. Serve in soup plates and add the cilantro.
  5. For the Pico de Gallo mix all ingredients in a bowl and enjoy!
