Baked Sopes

Ingredients

  • 1 cup corn flour
  • 1 tsp salt
  • 3/8 cup water
  • Cooking spray
  • 1/4 onion, cut in cubes
  • 2 garlic cloves, minced
  • 1/2 red bell pepper, cut in cubes
  • 1 nopal, cut in cubes
  • 1 tomato, cut in cubes
  • 2 tbsp chipotle in adobo
  • 1 lb lean ground beef
  • 3 pinches of salt
  • 2 pinches of black pepper
  • 1 branch of cilantro, chopped

Preparation

  1. In a bowl, add the corn flour, salt and water and mix with your hands to make a dough kneading until the dough is smooth and holds together.
  2. On a baking sheet, lay some baking paper to cover pan.
  3. Grab a handful of dough and form 2-inch balls, then place it on the baking sheet and flatten each ball to a 2-inch thick circle.
  4. Bake at 350F for 15 min until they are of a golden color.
  5. On a sauté pan, add some cooking spray, onion, garlic, red bell pepper, nopal, tomato and chipotle and sauté for a couple of minutes.
  6. Add the lean ground beef, pinches of salt and black pepper and cook for a couple of minutes.
  7. Add cilantro and finish cooking the beef completely.
  8. Place the sopes on a plate and top it with the beef mixture.
  9. Top the sopes with some guacamole to taste. Enjoy!
