Cream of Pumpkin Chicken Soup

  • 3 oz boiled chicken
  • 1 cup pumpkin
  • 1 cup potatoes
  • 1/2 cup leeks
  • 1 carrot
  • 2 Tbsp olive oil
  • Salt and pepper to taste


  1. In a pot, boil the water with a dash of salt and olive oil.
  2. Mince the pumpkin and potato into small cubes.
  3. When the water is boiling add all the veggies chopped finely and cover up. Cook at low-mid heat for 30 minutes.
  4. When it is done, blend soup until you have a thin cream. Serve with the boiled chicken, salt and pepper to taste and enjoy!
