Stuffed Patacón

  • 1 green plantain
  • 1/2 lb chicken
  • 1/2 tomato sliced
  • 1 cup Lettuce shredded
  • To taste Salt
  • To taste Oregano
  • To taste Garlic powder
  • Cooking spray


  1. Preheat oven to 350 F.
  2. Peel and cut the plantain in halves, bake them for 30 min or until golden brown.
  3. In the meantime, put a plastic bag on top of flat surface and add salt, oregano, and garlic powder to taste on top.
  4. Take out the plantains from the oven and put one of the halves on top of the bag with the seasoning, put another bag on top of the plantain and use a plate to flatten it. Repeat with the other half of the plantain.
  5. Take the plantains and put them in the oven again for 20 more minutes or until golden brown.
  6. Meanwhile, heat a layer of cooking spray skillet to medium-high heat and cook seasoned chicken for 10 minutes or until fully cooked.
  7. To serve, use one of the plantains as a base, add the tomato, lettuce, and chicken and top with the other plantain.
